freertos: Update task snapshot unit tests

This commit updates the task snapshot unit tests as follows:

- Both uxTaskGetSnapshotAll() and vTaskGetSnapshot() are now both tested
- Test cases are now dependent on CONFIG_FREERTOS_ENABLE_TASK_SNAPSHOT
