0b8f78e4c5 Disable building with AppleClang 17 
AppleClang 17 has the same compiler bug as Clang 19:
https://github.com/llvm/llvm-project/issues/110231

Updated conan configuration to disable building with AppleClang 17.

Updated compiler support documentation to show incompatible Xcode.
